Oatmeal Pancakes

This is one of my favorite recipes in the world- so healthy, so hearty (i can eat 3 pancakes in a sitting and with this recipe Im done after one) and even better- my one year old LOVES them! I have had a load of people asking for the recipe so I am going to share it here.

FYI- for my pancakes, not the one for my son, I cut out the syrup and add a tablespoon of chocolate chips to each one :) Logan likes them plain! Can you imagine if I gave him syrup? Yikes!

Oat Pancakes

 breakfast |  Great on their own but also tasty with low-fat vanilla yogurt and a sprinkle of chopped nuts.

  • 3/4 cup(s) white all-purpose flour
  • 3/4 cup(s) whole wheat flour
  • 1/2 cup(s) quick cooking rolled oats, do not use instant
  • 1 Tbsp baking powder
  • 1/2 tsp table salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup(s) unpacked light brown sugar
  • 1 large egg(s)
  • 2 large egg white(s)
  • 1/2 cup(s) unsweetened applesauce
  • 2 Tbsp unsalted butter, melted
  • 1 1/4 cup(s) low-fat milk, divided
  • 2 spray(s) cooking spray
  • 6 Tbsp maple syrup
  • In a large bowl, combine both flours. Add oats, baking powder, salt and cinnamon; stir well. Add sugar; stir again.
  • In a medium bowl, beat together egg, egg whites, applesauce and butter; stir in 1 cup milk. Pour egg mixture into flour mixture; stir well but do not beat.
  • Coat a 12-inch nonstick skillet or griddle pan with cooking spray; set over medium heat. Measure out 1/4 cup of pancake batter and drop onto prepared skillet or pan. Repeat with remaining ingredients to make four pancakes at a time. Cook on first side until pancakes are golden on bottom, about 4 minutes. Flip over and cook on other side until golden on bottom, about 3 minutes.
  • Remove pancakes to a preheated oven to keep warm or put on a plate and cover to keep warm. Repeat with remaining ingredients to make 12 pancakes total. (Batter thickens as it stands. Add part or all of the remaining 1/4 cup milk to achieve desired batter consistency.) Yields 2 pancakes and 1 tablespoon syrup per serving.

11 months

At the doctors this morning I weighed in at 20lbs and 4oz, and 28.75 inches! You might think that sounds big but really- I am only in the 20% percentile. But that's okay- I am fitting right into 12mo clothes right before I turn 12mo so I think I am pretty much perfect!
11 months has been exciting! I have learned how to do all sorts of new things! I now give high fives, wave hello, goodbye and goodnight, and sometimes even clap my hands.

Mom hardly gives me any baby food anymore. I love people food. I like spaghetti, Oatmeal pancakes, yogurt, animal crackers, bananas, and homemade bread with nutella. I do not like cheese just plain or on bread or tortillas. (Though I DO like Mac and cheese...)
I also drink out of my own cup now. Mom only gives me a bottle when I go to bed. I LOVE holding my own cup or bottle. But I think the cups with straws are a lot easier on a guy like me because then I don't have to tip my cup at all. That's hard and I am one lazy guy so I never do it :)
I have also learned to brush my teeth! Well... not on my own. Even though I only have two teeth, every night after my bottle I go into the bathroom and mom and dad scrub my teeth and gums with my special baby toothbrush. I LOVE it! Brushing my teeth is so much fun and my orajel toothpaste is YUMMY!

I have also learned how to stand and walk around on my own!! I can pull myself up on anything- even on mommy's back, or daddy's computer. I even stand up in the bath tub. They don't like that much though...
And you better watch out because as long as I am holding onto something I will go EVERYWHERE! I really like to pull things off the bookshelves or play drums on the coffee table. I don't like standing all by myself yet though. It makes me a littler nervous. But I am getting better at it.
I also understand lots of words. I get SUPER sad when mom and dad say no and wont let me have what I want like mommy's glasses. (They look so much fun when they are on her face!) After the first time they say no I usually will try a few more times, but eventually i stop because I am so mad and I cry.

But I also know my own name, and I know it when Mom and Dad tell me to come here. I can also point to mine and mommy's noses. (I LOVE noses.)

Just wait until I am a whole year old! Then there will be all sorts of cool things to talk about- and youll get to see pictures of me digging into my own chocolate cake!

Random Video from January

So, this is an old video. BUT- i was going through my vids in Picasa the other day and this is just too cute and too funny for me to NOT post :) (sorry about the influx of videos by the way- I finally taught my mom how to get on my blog so I have been trying to post a bunch of them for her.)

Anyways, Logan really doesn't use his exersaucer anymore now that he can move on his own, but this was in January when he finally discovered how to work the buttons on his toys on his own, instead of on accident. Hilarious.

Peek a boo

Really, the most entertaining videos that I get of my son USUALLY happen while he is in the tub. Because he loves the tub. And because sometimes I get bored of sitting in the bathroom for a half hour while he plays with his buckets.

Valentines Day 2012

We had a great Valentines Day! Adam had a test that morning, so I made him and Logan some cinnamon rolls and was sort of able to shape them like hearts :) Then while Adam was testing Logan and I made a love tent in the living room and set out all the treats we had made.

WE picked Adam up around ten, and Logan gave him a love bug "we" had made full of his favorite chocolate, and then he got to come home to my gift- love coupons, heart shaped snickerdoodles, and two free hours of video game playing :)
While Adam was at home enjoying alone time, Logan and I went on a galentines play date with our favorite friends Bethany and Noah Whitehead. We went to Cracker Barrel and had Sweet Potato Pancakes that I am sure were 1000 calories each and TOTALLY worth it.

Then we were off to take Adam to his job shadowing in Pediatric Neurology, and Logan and I hung out in the car for an hour talking to my dad and drinking strawberry juice, then we went to Olive Garden for lunch/dinner were Logan preferred eating the menu to bread sticks and mashed potatoes.

Logan had a great nap, then we read all our valentines from our valentine box (after Logan ATE his first we banned home from getting to hold his own:) then Logan got to play with his new mice toys and have an hour long swimming bath (he LOVES to swim in the tub, Video later.)

Adam and I then spent the evening eating crackers and cheese with chocolates, covered strawberries, and sparkling cider while watching our favorite shows :) It was relaxing, family oriented, and a SUPER AWESOME day.

PS- Adam did well in buying me roses, butterfinger hearts and- wait for it- My exercise bike!! Best gift ever from the best husband in the entire world :)

10 Months!

Hello Everyone! It is Logan here again. Except now I am ten months old! This is ten month old Logan, not nine month old Logan. He was a BORE!!
I have TWO teeth now! Two!! They are fun. I can chew crackers better, hurt mom and dad when they don't do what I like, and I can run my tongue over them all day long. I cant wait to get even more! Won't it be fun when I have a whole mouth full?
Mom and dad have finally given up on getting me to crawl- like I have been telling them too. Now they help me with what I want to do- which is stand up all on my own! I am real close- our furniture is just about two inches too tall. But soon it will be too short for me and I will be unstoppable! I am already super strong and pulling myself up just holding onto Mom or Dads pants is easy peasy.
I really like to move- I crawl over mom and dad all day, and I scoot around the whole room to get to toys or fallen Cheerios- all just on my butt!
I really like all of my toys- they are so much fun to play with! Its like I have been playing wrong with them my whole life! Did you know that a phone can play music but I can also hold it up to myself and pretend to TALK on it?! And did you know that the ipad not only has moving pictures, but songs I can dance too and animals that move when I touch them?! So cool.
I also really like that mom keeps all my stuff in buckets, because I really like to dump them out. And I like to take everything off the shelves. I never play with the things like books- I just don't like them being on the shelf. I'm funny that way. I don't like having socks on my feet either. Mommy looses them all the time because I am always taking them off and leaving them in strange places.
I love daddy best. Dont tell mommy. Its just that daddy gives me piggy back rides all the time, and runs with me around the house, and lets me chew on his cur;s whenever I get sad. Mommy never lets me chew on her curls. But she does feed me and change me and cuddle me when I get tired so I do love her a lot too.
I love my bath time. Especially now that I have all kinds of cool toys. I look to chew on them, then drink the bath water, then splash all the bubbles to me, then eat the bubbles. Its a lot of fun.
Mommy taught me some cool tricks- I LOVE to play peek a book with her now, and I love to wave hello and bye bye, and I LOVE to give high fives! I also like tents. I like to hide and then find things or be hidden. Plus- its fun to play in my own little special place.
I eat lots of food now- mommy calls it real people food. I like green beans, and crackers (all kids- I like to shove them all in my mouth at once) I like yogurt, and mac and cheese, and spaghetti- I am getting to be a really big boy! (Even though I am still barely 20 lbs and 28 inches.)
The only thing I really hate right now is being alone. I get super upset when mom and dad leave the room. Even if mom is in the room with me, if dad goes into the bathroom I get sad. I just want them around me all the time. That's why i love the grocery store- becasue there are so many people to see and I am so darn cute that they always smile at me and laugh at me! I especially like it when the cute girls smile at me- I have a special coy smile JUST for them. :)
